ABSTRACT

This research determines the impacts of COVID-19 US on crawfish production and consumption for 2020 and 2021 using an Equilibrium Displacement Model. In the US, crawfish is one of the seafood commodities where most production is consumed by domestic consumers (7% of domestic consumption is from imports). Crawfish and rice are complementary. Therefore, the impacts of COVID-19 on crawfish consumption simultaneously influence rice production and crawfish producers and consumers. In the first year of COVID-19 (2020), the reduction in crawfish retail demand caused negative effects on final consumers and producers. However, crawfish consumption recovered significantly in the second year (2021), which could compensate for the loss in 2020. Overall, consumer and producer gains ranged from $549 to $626 million if the COVID-19 pandemic only impacted retail consumption. However, in 2021, the increase in production costs due to higher oil/diesel prices and other input prices caused the farm supply to decrease. As a result, total welfare gains ranged from $200 to $228 million. If the demand in 2021 did not increase, but the crawfish farm supply decreased, consumer and producer losses ranged from $929 to $1045 million. Overall, the total effects of COVID-19 on consumers and producers for 2020 and 2021 depend on its effects in 2021. If the demand in 2021 increased following the decrease in farm supply, consumers and producers would benefit from the shocks of COVID-19 due to higher post-COVID-19 demand.

ABSTRACT

Seafood is the food group with the highest share traded, and the U.S. is the world's largest seafood importer, importing 79% of the seafood consumed. Hence, a study examining the impacts of the measures to contain COVID-19 on U.S. seafood imports will not only show how U.S. seafood availability has been affected, but will also give strong indications of how resiliently the global seafood markets have worked through the pandemic. We find that U.S. imports of seafood actually increased in 2020 and 2021, suggesting supply chains were able to adapt to potential disruptions. Moreover, for the 14 largest product forms imported to the U.S., there are no strong price movements. Given that there is a global market for most species groups, this adaption also suggests that the markets have worked quite well beyond the U.S. Hence, while there have undoubtedly been market shocks associated with the COVID-19 measures such as the reduction in demand from the restaurant sector and the increased sales in the retail sector, opportunities seem to balance out challenges, and the supply chains for seafood to the U.S. have been highly resilient.

ABSTRACT

Pempek is a food that contains a lot of protein from fish meat in the form of a homogeneous protein gel, white in color, chewy and elastic texture. Improvement of pempek production skills for people of Javanese descendants in sumber Rahayu Village, south sumatera can to be a provision for the community as a side-home business in the midst of economic difficulties due to the Covid 19 pandemic. The methods in this activity are survey to get 15 person participants, pre-test and post-test of knowledge participant, discussion, demonstration producing of pempek and organoleptic test. Before training, a number of 53.8% of participants had ever made pempek and 38.5% of participants had knowledge about nutritional value of pempek. The average pre-test score is 38 points while the post-test score is 96 points. This shows that there is an increase in the knowledge and abilities of participants before and after being given the training. The average participant's assessment of the color, taste, and aroma of pempek is between 2.54 - 2.67. This shows that the participants like the color, taste, and aroma of pempek.

ABSTRACT

Drop in nutrition value during food logistics impacts the health of consumers. Vegetables, fruits, fish, milk lose nutrients during logistics if it is not properly monitored. Real-time tracking and monitoring, large data handling and secure business transactions are key to the effective operation of supply chains. The COVID-19 pandemic has taught us the need for handling unforeseen situations in various sectors. Limitations to logistic operations, inaccessible warehouses, shutdown of consumer outlets for an unexpected duration, have affected the supply chain drastically. This has laid emphasis on the need for technology-based solutions that can monitor, control and make quick decisions, that can reduce losses. With this scenario as a background, a system architecture has been proposed to detect the nutrient value of food by periodically monitoring temperature and humidity in real-time and alerting the cold chain entities in cold chain environments. This architecture is proposed as an integration of Internet of Things (IoT) with cloud-based storage, to provide real-time data collection at the end-user, seamless storage and computation in the cloud and secure transactions at the business layer. An experimental setup of the system architecture has been configured and the implementation has been tested at a preliminary level. The performance of the application is analyzed and the proposed web application is efficient for large scale supply chain applications, provided scaling of hardware resources.

ABSTRACT

For many Kenyans, the aquaculture business provides a vital source of food and work. However, information on Kenya's aquaculture sector's resilience in the face of emerging global shocks such as the COVID-19 pandemic requires additional examination. Prior to the epidemic, Kenya's aquaculture industry had grown from a tiny participant to a critical component of the country's fish food system, with fish and fisheries products becoming the most extensively traded food commodity in Kenyan market places. However, as indicated in the review, the aquaculture value chain has not been scrutinised since the onset of COVID-19. Lockdowns enacted during the pandemic had a significant influence on access to aquaculture inputs, fish commerce, and the socio-economic livelihoods of stakeholders and players in Kenya's aquaculture value chain. Thus, initial and long-term adaptive strategies, particularly those implemented by governments, could help to the development of COVID-19 specific and generic resilience to numerous shocks and stressors among stakeholders and players involved in the country's aquaculture industry. Some of the measures include a government incentive package to help the fisheries and aquaculture sectors recover, improve farming operations, and gain market trust, as well as the adoption of new methods to reduce labor intensity, such as intelligent sensors, camera systems, and automated or remotely controlled monitoring/feeding strategies. Such strategies and policies can protect the sector from future shocks triggered by pandemics and other unforeseen circumstances.

ABSTRACT

Covid-19 pandemic had limited people's movement despite the demand to remain productive and maintain good health. Therefore, it was necessary to provide foods which are easy to distribute, durable, nutritious, and easily transformable to increase immunity. This research aims to develop a composite flour (TK) formula with optimal proportion of wheat flour (TT), snakehead fish flour (TIG), pumpkin flour (TBuL), and pumpkin seed flour (TBiL) which then enriched with zinc. The resulting TK is expected to be used as an ingredient for nutritious snacks containing high protein and zinc. The research was conducted in four stages, namely the making of each constituent flour, determining the best formulation with the Response Surface Methodology using Central Composite Design model, characterizing the physicochemical properties of TK and making meatballs, biscuits, and unting-unting from the TK. The three products were tested on experimental animals for their metabolic responses. The optimization of the formula resulted in three optimal formulations, namely formula A, B, and C with the proportion of TT:TIG:TBuL:TBiL respectively as follows 55:20:15:10;56.65:20:13.35:10;57.98:20:12.02:10. The most optimal formula of composite flour was formula A with the highest protein (26.12%) and zinc (18.06 mg/kg) content among other formulas. Then, zinc was added into Formula A using microencapsulation, and TK with protein content of 26.74% and zinc of 56.8 mg/kg were obtained. The histopatology observation on experimental animals showed that the three products made from TK did not cause necrosis of the liver or cell infiltration in the kidneys.

ABSTRACT

Introduction: During the period of confinement due to covid-19, the population modified work and social activities, altering eating patterns, physical activity practices and sleep, causing a direct impact on physical and emotional health. Background: To describe the changes generated in eating behavior and lifestyles during the COVID-19 pandemic in a university population living in the state of Chiapas, Mexico. Material and method: Cross-sectional study, where university students from the state of Chiapas, Mexico participated. Data collection was carried out through a digital survey using Google Forms. Results: 306 students participated with an average age of 20.75 years (SD= 2.062), a statistically significant increase was found in the number of meals eaten per day, the average per week in consumption of processed meat, eggs, cookies (pastries) and sugary drinks. Statistically significant decrease in consumption of fish and shellfish, dairy, fast food. Also, significant increase, sleep time, watching television and use of electronic devices. Conclusions: The population presented a tendency to changes in diet and unhealthy lifestyles, increasing the risk factors of suffering from other types of diseases.

ABSTRACT

The first year of the COVID-19 pandemic in 2020 was associated with an "anthropause" in many industries, initially reducing greenhouse gas emissions and other negative anthropogenic influences. However, outdoor recreation has exploded in popularity in response to closures of indoor recreation options, increased free time, and/or increased levels of stress. We tested for the effects of the COVID-19 pandemic on the sale of fishing licenses in Wisconsin and on vehicle counts that were observed at public lake access points in Vilas County, Wisconsin, in 2020. In the summer of 2020, fishing license sales in Wisconsin, USA, increased, particularly among first-time license purchasers for whom cumulative sales in 2020 increased by 71% and 35% compared with the previous 5-year average for Wisconsin residents and nonresidents, respectively. Changes in the vehicle counts at lake access points in the summer of 2020 varied considerably by lake. However, lakes with greater proportions of public shoreline experienced pandemic-associated increases in lake visitors. Our results suggest that the distribution of recreational fishing effort in Wisconsin changed during the pandemic, potentially placing additional harvest pressures on hot spot inland lakes.

ABSTRACT

According to five national reports prepared by the Food and Agriculture Organization (FAO) Subregional Office for North Africa, the Maghreb fishery and aquaculture sectors experienced a significant decline in activity in 2020 due to the COVID-19 pandemic. The reports are based on a survey conducted in four Maghreb countries: Algeria, Mauritania, Morocco and Tunisia, which all experienced a drop in production and income in 2020. The reports also showed that consumption shifted towards canned, frozen and processed fish at the expense of fresh products, especially at the beginning of the pandemic. This consumer behaviour impacted fish demand and prices.

Due to the growing demand for instant food and lifestyle change after the COVID-19, aquatic pre-made products become popular. The unique nutritional and functional characteristics and processing suitability of aquatic products make them suitable for the development of ready-to-eat, instant heat, instant cooked and ready-to-use pre-made products. However, due to their unique fishy taste, texture and perishable characteristics, appropriate pretreatment technology, flavor and quality improvement and maintenance technology as well as storage technology in the processing and storage process need to be adopted so as to improve the quality of pre-made products. The main factors affecting the quality and safety of aquatic product pre-made products include biological hazards, chemical hazards and physical hazards. Therefore, quality control technologies of aquatic pre-made products including the raw material collection, processing process and the cold chain transportation process are necessary. In the future, aquatic pre-made products should be more nutritious, high-quality and diversified because of the improvement of nutrition and quality control technology.

ABSTRACT

Producing safe and high-quality fish and seafood products, for both domestic and export markets must be considered a priority for the entire fish and seafood chain, from fishers and producers towards consumers and food safety competent national authorities, who should update the relevant food safety legislation and ensure compliance with it. The aim of this study is to highlight the rules of hygiene and food safety that are imposed on the fisheries and seafood sector in order to prevent staff illness with Covid-19 and ensure the safety of products. Several practical recommendations are given for completion and improvement of the current preventive measures such as good hygiene practices to which is added specific protocols to safeguard the health of the employees who works in the fish and seafood production and processing sector.

ABSTRACT

The article presents the production of bioregional maps lived and managed in the territory of fishing communities, based on their involvement, knowledge and actions, referring to the impacts of the oil spill in 09 locations on the coast of NE Brazil. Several fishing communities were affected by the oil spill crime that occurred in 2019. Territorial management is constituted, in the event on screen, from actions that aimed to solve problems arising from the impacts on the territory that are described and problematized by the fishing communities themselves that had suffering prolonged over time and space due to the Covid-19 pandemic. The descriptions and problematizations were constituted and systematized from the project "Manchas do Sofrimento" originated from the INCT Amb Tropic II, GT 4.0 Oil Spills. Decolonial and Popular Education references allowed the fabric of this article, whose methodology was based on a qualitative approach, based on the collaborative construction of maps by fishermen and fishermen and a team of researchers and scholars from the Federal University of Bahia. The technique of bioregional mapping, based on citizen science, structures the methodological dimension. As a result, we bring a methodology constituted in an integrative way, in which multiple knowledge enabled the elaboration of maps, which demonstrated the sense of belonging of fishermen and fisherwomen and defense of their territorialities. from the collaborative construction of maps by fishermen and fisherwomen and a team of researchers and scholars from the Federal University of Bahia. COVID-19 impacts on farmed species: focus on turbot and caviar 2022 ii + 44 pp ; 2022.

ABSTRACT

The impacts of the COVID-19 pandemic on the seafood supply chain were assessed, focusing in particular on the farmed turbot supply chain and the sturgeon caviar market in the EU. Overall, 2020 saw consistent export volumes of turbot in the EU. The sharp decline in trade at the initial impact of the pandemic, during March and April of 2020, has been offset by the peak export seasons of summer and Christmas. In Spain, turbot used to be sold to the HoReCa segment and other "premium" markets at international level (USA, Asia). As these traditional segments were closed during lockdown periods or experienced logistic problems, main Spanish producers almost completely shifted to the retail market in a few months. So far in 2021, an operator reports that a significant part of turbot production is still sold through retail despite lower sale prices, since the HoReCa sector is still impacted by the low level of tourism activities. This appears consistent with the growth of at-home consumption volumes in Spain in 2020 (+55% compared to 2019). However, this shift caused a slight drop of the average price. Overall, 2020 saw lower exports and imports of caviar. The sharpest decline in trade was seen during the initial impact of the pandemic, in March and April 2020. Logistical problems, as well as a decline in demand are the explanatory factors. As the year progressed and the peak season of Christmas drew closer, volumes increased to approach pre-pandemic levels. During the first half of 2021 the trade of caviar seemed to be higher than ever before. As there is no production data available it is unsure how production was affected, but several stakeholders report postponing their spring harvest.

ABSTRACT

The world tilapia aquaculture production grew from 380 000 tonnes in 1990 to 6 million tonnes in 2018, making it the fourth-largest species group in global aquaculture. Tilapias are the second-largest species group in Mexico's aquaculture with its 53 000 tonnes of production contributing to around 20 percent of the 247 000 tonnes of total aquaculture production in 2018. Mexico is the second-largest tilapia capture fisheries country, and its 116 000 tonnes of tilapia capture fisheries production in 2018 was primarily contributed by culture-based fisheries. Overall, Mexico is the second-largest international market for tilapia products, and the 228 000 tonnes live weight equivalent of its tilapia import in 2018 was higher than its domestic production. The average per capita apparent tilapia consumption in Mexico was 3.08 kg (21 percent of its total fish consumption) in 2018, which was much higher than the 0.9 kg world average. This document assesses tilapia farming and the value chain in Mexico by examining tilapia farming systems and practices, dissecting the tilapia value chain, evaluating the sector's social and economic performance, discussing the impacts of proper governance and institutions on the sector development, and highlighting potentials, issues, constraints and challenges in the development of tilapia farming or aquaculture in general. The document ends with a brief discussion of the impacts of the ongoing coronavirus disease 2019 pandemic on the tilapia industry in the country.

ABSTRACT

This article presents an analysis of aquaculture at the global level, stressing the extent to which the sector faces a range of challenges, among them a rising demand for seafood products in response to demographic growth, a global biodiversity crisis and planet-wide changes that include the effects of climate disruption. At the same time, it does not seem that we are currently on course to meet the international biodiversity objectives we have set ourselves: wide-ranging changes are needed in many sectors of production to achieve this. And the COVID crisis has revealed the low resilience of globalized production systems and shown why it might be advantageous to repatriate some production. Though aquaculture still has important environmental problems to resolve before it is sustainable, it has some competitive advantages by comparison with other animal products that ought to enable it to confront the food security challenge in the period to 2050. Various scenarios are proposed, including an increase, on a trend basis, of 44% in global aquaculture production. All these scenarios will require political choices (given that conservation and sustainable-farming approaches can rarely be fully reconciled) and the public will need to be provided with honest information, while biodiversity is prioritized as both a universal common good and a source of future solutions.

ABSTRACT

To clarify the most suitable fish paste for preparing lion's head meatballs, this study investigated the effect of adding 6 different silver carp fish pastes: fresh unwashed (group 1-1), fresh washed (group 1-2), frozen unwashed without antifreeze agent (group 2-1), frozen washed without antifreeze agent (group 2-2), frozen unwashed with antifreeze agent (group 3-1), and frozen washed with antifreeze agent (group 3-2) on the basic nutrients, color, texture properties, waterholding capacity, sensory and flavor properties, thiobarbituric acid reactive substance (TBARs) value, and total volatile basic nitrogen (TVB-N) content of pork/fish composite meatballs. The results showed that the contents of protein and fat in meatballs from groups 2-1 and 2-2 were lower than those in groups 3-1 and 3-2, and the contents of water, protein and fat were 61.68%, 11.32% and 19.41% for group 2-1, and 62.45%, 11.09% and 19.33% for group 2-2, respectively. The gel properties, hardness, elasticity, cohesion, and sensory quality of groups 3-1 and 3-2 were significantly higher than those of groups 2-1 and 2-2 (P < 0.05), but there was no significant difference compared with groups 1-1 and 1-2. The odor response value of groups 3 was lower than that of groups 1, and groups 3 had the highest sweetness value (3 039.66) and lowest bitterness value (534.59). The TBARs value and TVB-N content in groups 1-2, 2-2, and 3-2 (with washed fish paste) were significantly lower than those in groups 1-1, 2-1 and 3-1 (with unwashed fish paste) (P < 0.05). Since fresh fish paste is not easy to store and subject to spoilage, frozen washed fish paste with antifreeze agent can be used to produce composite meatballs.

This article reports on the inclusion of wild-caught shrimp in the USDA Agricultural Marketing Service (AMS) program to help Louisiana's shrimp industry during the COVID-19 pandemic. As a result of a quick Sea Grant mobilization, $50 million in cash from USDA was infused into the shrimping industry, and 7.6 million pounds of Louisiana shrimp were taken out of inventory and distributed nationwide.

Since the 1990s, food safety has caused widespread concern from all walks of life. According to the theory of bibliometrics and scientific knowledge map and knowledge mining method, this paper quantitatively analyzed and visualized 3024 food safety papers and 31032 references in the core collection of Web of Science (WoS) to explore their research status, topic evolution and development trend. The number of academic papers in the field of international food safety increased by 11 times during the past 31 years;the knowledge structure of this field consists of foodborne pathogenic bacteria, food safety cognition, public health and food safety management;its research topics showed an evolution from consumer behavior and food-borne diseases to food safety risk management, food safety governance, food traceability system, food testing, to food global value chain, heavy metal excess, pesticide residues, food safety culture, to blockchain technology, Corona virus disease 2019 (COVID-19) epidemic, food fraud;food safety knowledge and willingness to pay premium, food contamination, aquatic seafood safety, vegetable safety, blockchain, COVID-19 represent the frontier trends, so as to provide references for academic research and government supervision in this field.
